I woud definitely recommend the TTartisan 11mm f/2.8. I think it is better to have a high resolution sensor but it is just a preference, that should be ok with your sensor.

You can also choose the canon 8-15mm fisheye if you have more money. Should be used with an adapter (I use it with the sigma adapter and it works pretty well). It is really good and you have AF.

You can defish your images of course. I use hugin software (free). Even with rectilinear projection, you can get very good results, you do not loose so much resolution. Otherwise, there are other projections which give very good results for architecture, like the pannini projection.

If you shoot kandscape, you can use cylindrical projection, you will get the same results as panoramas. I really like it.

But if you are happy with the fisheye look, just keep it like this !
