Light ‘n luscious summer salads
Karo and California summer fruits make it simple. Light ‘n luscious summer salads with fresh peaches, plums and nectarines. And nothing tops them off better than these zesty salad dressings made with Karo Corn Syrup. Karo helps to lock in all the natural fresh flavor of summer fruits, while balancing and blending the flavors to make a light, delicious and silky smooth dressing.
- Creamy Mustard Dressing
- Creamy Curry Dressing
- Creamy Oriental Dressing
- Lemony Fruit Dressing
- Spice Sauce
- Mint Sauce
Creamy Mustard Dressing (Basic recipe)
In a small bowl, stir together 3/4 cup real mayonnaise, 1/3 cup KARO Light Corn Syrup, 1/2 tsp dry mustard, 1/8 tsp salt and dash pepper until smooth. Add 1/3 cup finely chopped plums or nectarines or peeled peaches; stir until well-blended. Cover; chill 2 hours to blend flavors. Serve over cooked cubed meat or poultry. and sliced fruit and vegetables. Makes 1-1/3 cups.
Creamy Curry Dressing
Follow basic recipe. Omit mustard. Add 1 tsp grated lemon rind and 1/2 tsp curry powder. Makes 1-1/3 cups.
Creamy Oriental Dressing
Follow basic recipe. Omit mustard. Add 11/2 tsp soy sauce and 1/2 tsp ground ginger. Makes 1-1/3 cups.
Lemony Fruit Dressing
In 2-qt saucepan, stir together 1/2 cup KARO Light Corn Syrup, 1/2 cup water, 1 tsp grated lemon rind and 1 Tbsp lemon juice. Stirring occasionally, bringto boil over medium heat and boil 5 min. Add 2 cups cut-up plums or nectarines or peeled peaches. Stirring frequently, bring to boil and boil 1 min. Mix 1 Tbsp corn starch and 2 Tbsp water until smooth. Add to fruit mixture. Stirring constantly, bring to boil and boil 1 min. Add 1/4 cup chopped walnuts. Serve warm or chilled over cottage cheese and sliced fruit. Makes 2 cups.
Spice Sauce
Follow basic recipe. Omit lemon rind and walnuts. Add 1/2 tsp ground cinnamon and 1/3 tsp ground nutmeg.
Mint Sauce
Follow basic recipe. Omit lemon rind and walnuts. Add 1/4 tsp dried mint leaves, crushed.
